  • 360g (1 1/2 cups) ripe sourdough starter (100% hydration)

  • 14g (1 tbsp) caraway seeds

  • 5g (1 tsp) salt

  • Nigella seeds (black cumin), optional for topping

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, whisk together the bread flour, rye flour, caraway seeds, and salt.

    • In a separate bowl, blend the water with the sourdough starter until smooth.

    • Combine the wet ingredients with the dry until a shaggy dough forms.

  2. Knead the Dough:

    • Turn the dough out onto a lightly floured surface.

    • Knead for 5-8 minutes until the dough is smooth, elastic, and slightly tacky, adjusting flour as necessary.

  3. First Rise:

    • Place the dough in a greased bowl, cover, and let it rise at room temperature for 1-2 hours, or until doubled in size.

  4. Shape and Second Rise:

    • Punch down the dough to release air bubbles.

    • Shape into an oblong loaf and place it in a greased 9x5 inch loaf pan.

    • Cover and let rise for another 1-2 hours until puffy.

  5. Baking:

    • Preheat your oven to 400°F (200°C) with a rack in the center and a metal pan on the bottom for steam.
