SECRET #1: LOW AND SLOW IS THE ONLY WAY TO GO
Cooking corned beef is like a marathon, not a sprint! Here's why:
NEVER boil it! (That's the fast track to tough meat!)
Slow cooker method: Set on LOW for 8-10 hours (while you sleep, it gets delicious!)
Oven method: Roast at 275°F in a covered dish with plenty of liquid
Stovetop method: The gentlest simmer you've ever seen for at least 3 hours
SECRET #2: MOISTURE IS EVERYTHING
Dry corned beef is SAD corned beef! Here's how we keep it juicy:
Keep that beautiful meat FULLY submerged in liquid at all times
Use water, beef broth, or a mix of both for INCREDIBLE flavor
Add more liquid if needed during cooking - never let it drop below meat level!
SECRET #3: THE REST IS HISTORY
After all that cooking, your corned beef needs a NAP:
Let it rest for 15-20 minutes before slicing (NO PEEKING!)
